The first Moscow-based project by Saint Petersburg restaurateur who studies Italian cuisine, Aram Mnatsakanov. Probka combines the traditions of Mediterranean cuisine and Aram's love for organic food. Dishes are prepared with produce from local farmers, but a number of select ingredients are always sourced from Italy — capers, anchovies, olive oil, and balsamic vinegar. The menu is a perfect balance of classic Italian cuisine and experiments: homemade pasta with pesto sauce, shrimp and zucchini tagliolini, country-style chopped steak. There are over 20 types of pizzas, all made with old Italian recipes from 72-hour dough, which becomes light and airy. Toppings range from traditional ricotta and spinach to black truffle and mortadella with pistachios.
The wine menu includes Italian wines and experimental European varieties, for example, orange wine from Slovenia or Spanish pet-nats.
The design of the restaurant is clean, featuring an open kitchen, a well-lit main hall, warm lighting, minimalist wooden tables, velvet sofas, and decorative plates with celebrity autographs on the walls. Panoramic windows (the restaurant is located on the first floor of a business center) offer a view of Trubnaya Square.
